The True Cassoulet Recipe

Ingredients for 4 people:
– 350g to 400g of Castelnaudary beans
– 2 duck or goose confit legs, cut in half
– 4 pieces of Toulouse sausage
– 4 pieces of pork (shank, shoulder, belly)
– 250g of pork rind
– Salt pork
– 1 poultry carcass or pork bones
– Onions, carrots
The Recipe:
1. The day before, soak the beans in cold water.
2. The next day, cook them in lightly salted, filtered water for about an hour.
3. Meanwhile, prepare the broth with the bones, vegetables, and pork rinds.
4. Cook the meats in their own fat, then set them aside.
5. Layer the beans and meats in a casserole dish.
6. Cover everything with hot broth and simmer over low heat for 2 to 3 hours.
Tip: For a perfect experience, pair your cassoulet with a local Cabardès wine, which will enhance the flavors of this legendary dish.
