The real Cassoulet recipe

Ingredients for 4 people:
- 350g to 400g of castelnaudary beans
- 2 duck or confit thighs cut in two
- 4 pieces of Toulouse sausage
- 4 pieces of pork (jarret, shoulder, chest)
- 250g of pork
- salted bacon
- 1 poultry carcass or pork bones

The recipe:
1. The day before, dip the beans in cold water.
2. The next day, bake them in filtered and slightly salty water for about an hour.
3. Meanwhile, prepare the broth with the bones, vegetables and rings.
4. Cook the meats in their fat, then set aside.
5. Mount the cassoulet in a breach by alternating beans and meats.
6. Cover everything with hot broth and cook over low heat for 2 to 3 hours.
